Possible Snow, Strawberries and Meatballs

We have a big cold front coming in this weekend. Snow levels are supposed to drop to 2000 ft…I googled our elevation…1576. Heck yes I will drive 500 ft up to take the girls to see the snow! This is what our beautiful view is everyday…

Big Bear! It’s beautiful and full of snow. I took this picture just hours before our big storm last weekend…so add 2 more ft of snow up there. ha ha. It’s so close to go see snow but I have NEVER driven in ice or snow and I’m afraid of the mountain roads. Not really sure I would trust Jason driving those roads, but I would atleast feel better with him in the car with me going up! So yes, I don’t care if it’s fake snow and it only lasts an hour. It will take us 10 minutes to drive to an elevation of 2000!

It’s strawberry season here! I stocked up big time at Henry’s Marketplace this morning. We made chocolate covered strawberries today when Ava got home from school…while sipping hot chocolate.

 

The girls loved dipping the strawberries. Ava kept saying “this is so much fun!”

 

And of course, sipping their hot chocolate.

Dinner tonight was another success…Layla LOVED it. Like my mom suggested, maybe her cooking with me is making her want to eat what she’s helping with. I think that is true. Layla has always just picked at her dinner. It’s not that she didn’t like anything, she just would rather sit and not eat. I’m so proud of her and excited! Maybe now she will hit 30 Ibs before she turns 4!

Tonight’s dinner was Zesty Fried Meatballs and a Mushroom Cheese Crisp Salad.

The meatballs shaped and breaded…ready to be fried.

 

Yes, the girls are in their jammies, they had already showered.

The meatballs were only “fried” for like 3 minutes. Just long enough to get golden, stink up the house and ALMOST set off the fire alarm. I think this might have been my first time really frying something. Interesting!


I didn’t have enough vegetable oil so had to add some olive oil. Oops.

You can tell the left row was my first batch…I didn’t really know what I was doing.

Then we made the dip for the meatballs, Roasted Bell Peppers, Catalina dressing and Italian Seasoning. YUM!

 

The girls cried and fought amongst themselves “quietly” over who got to press the button to puree it. They ended up taking turns while making ugly faces at eachother.

Hey, at least they were quiet about it!


And guess what comes next…yes, dinner, but this is even better…


DOUBLE DIGITS!!!! That sounds great to say!

And the final product, dinner. The cheese crisps are just baked shredded Parm and Asiago Cheese. I just shaped the cheese into a circle, baked for 5 minutes and then carefully flipped them and baked about 3 more minutes. It’s a great twist to a salad!


And another of Layla enjoying her dinner. She kept saying how much she loved it and I love hearing that! It’s music to my ears!


I’ll start a recipe thing once I figure out how. And can you find waldo in this picture? (Stella). ha. Always so regal!
