Last night the girls and I layed in bed and watched Coming Home, the show about surprise military homecomings. It was the first time that Ava has shown any real emotion to Jason being gone. She said that it made her want to cry, which was big for her! She kept talking about the kids her age seeing their dad’s and how happy they were. This is huge! But, she now wants Daddy to surprise her when he comes home…and she has been talking about it ever since. I don’t see that happening.
Tonight was a crock pot night, so Layla was my only helper! Sour Cream Bacon Chicken. Healthy, no. Yummy, yes. It was so easy, 10 minutes of prep and then cook all day. When we got home this evening, I made green beans with bacon and a prepackaged Caesar Salad!
Layla helping unpack groceries. I’m not sure how she didn’t manage to smash the eggs!
I fried the bacon for a bit, I was apprehensive about raw bacon AND chicken cooking all day. I have already stressed my apprehension for cooking raw chicken with all the other food. So, I picked one to cook and one to be raw. HA!
The chicken is ready, I cut up some shallots to line the bottom of the crockpot, then put the chicken in.
Layla mixing the sauce for me. Roasted Garlic Mushroom Soup, Sour Cream and a bit of flour. I also added a tad of the bacon grease in there.
DONE! Ready to cook all day!
And walaa…dinner is ready, 6 hours later. I put the chicken on top of Couscous like the recipe suggested, although next time, I think I will serve it on top of egg noodles.
And desert…like I said…tonight was soooo not healthy!
Tomorrow afternoon, Ava has a Dr appt, so there won’t be cooking. I’m thinking maybe a night out! The Girls and I haven’t gone to a sit down restaurant in forever!
Speaking of eating out…do you remember Open House night when you were in school. You could always find cookies and punch or something like that in the cafeteria or hallway. Well, Ava’s school is having an open house at the end of the month…guess what we get…
In & Out!
