Back To Cooking!

To be honest, I’m not sure where my day went! I had a whole list of things I needed to get done and only managed to check off half! But, I never sat down until now. Weird. I keep trying to think of what might have side tracked me today, but I got nothing!

Before lunch today, Layla and I made an awesome fruit salad.

You will never guess where I got this recipe. Yes, it’s just a bunch of fruit, but there was a custard that I made to pour on top, it didn’t turn out. But, it was an actual healthy Paula Deen recipe! WOW!

Now the mangos. Layla LOVES mangos!


Instead of helping me with the watermelon, Layla ate it!

And since the custard didn’t turn out…we used the next best thing, whip cream!


Now, I’m upset, I had this really cute video of Ava doing her homework after school. Adding! It was so cute watching the way she counts her fingers and was always right! But, when it uploaded, something happened with the video and it didn’t download the right way. Stupid me, I had already “clicked” the erase after uploading box! Grrr!

And dinner tonight, the girls were off playing and didn’t want to help. Good for them. So I thought, great, making dinner will be so quick tonight. Wrong!

The prep time on recipes…are they ever right? Mine tonight said 15 minute prep. Um, no, it took me 30 minutes alone, just to cut all the veggies! That’s fine…just warn me in advance!

I kept praying tonight that dinner would turn out wonderful! It’s a new recipe and it called for an orange bell pepper. Do you know how gosh darn expensive those things are…for ONE…4 bucks! I seriously was going to cry if dinner turned out awful and I spent 4 bucks on a pepper alone!

So, all the veggies for the Spanish Omlette…after 30 minutes of cutting!


Incase you are wondering, because I think they look like radishes, they are red potatoes…then the 4 buck orange bell pepper, onions, garlic and parsley!

I have to say though, after all the chopping, the cooking was quick and easy!

Now adding the egg and letting it sit for a few minutes and then put it in the oven to finish setting.


And walaa…it’s done!


Now, my new favorite side dish…delish! Carrot oven fries! Basically, just cut the carrots, toss them in olive oil and a bit of cornstarch along with a packet of Hidden Valley Dressing and Seasoning mix.The girls love them…I love them even more!

It was GREAT! The Spanish Omlette turned out wonderful! I made it tonight knowing we will have left overs for tomorrow! The 4 buck pepper was well worth it!

And desert…another way to use our fruit salad!


So, back to cooking real food after a week off and it feels good! YAY! I’ll put the recipe for the Carrot Fries and Omlette in the recipe tab.

Now, I need to go think about what happened to my day and where it went! Seriously!
