I’m pretty sure my Mom and Dan are about to call the cops to see if anything is wrong. Here I am! ha!
I left the land of the living yesterday and worked all day and night on a research paper I have due tomorrow.
Any advice for a 10 page paper on the digital divide? Any takers? Please? For the most part it’s done. I have some tweaking, editing and graphs to add…but spending yesterday and almost pulling an all nighter writing it really did the trick! Good thing I had fancy coffee to keep me company!
Today I worked on the paper more, but actually had a chance to get a few things done around the house. It felt good to not be sitting all day!
Tonight is the premier of Coming Home on Lifetime. It’s about surprise military reunions. I have a box of tissues and waterproof mascara on and am fully prepared to spend an hour crying and wishing it were us!
It was home made pizza night in our house! Chicken Pesto pizza with Feta cheese! Yummo!
Well, of course first, we made our salad. I don’t ever offer the girls dressing. I think it’s healthier for me to just toss the salad with a little vinaigrette and then let it sit while I cook dinner. Layla “peppering” the salad for me.
Oops, someone forgot to take off her shoes…we fixed that!
Ready to start the pizza making!
I let the girls “shred” the chicken for me. I just boiled it tonight to make it quick! They loved tearing the chicken. Layla kept sneaking pieces though!
For the crust I use the refrigerated Pillsbury thin crust. I bake the crust first, and then when it’s done, I flip it…it comes out of the oven like this…
But then I flip it so that the hard bottom is on top…and the soft top will cook crisp when I put it back in the oven with the toppings. Confused? Here’s the flip.
That way the bottom doesn’t continue to cook! Now the toppings!
I start with Pesto.
Then Mozzarella cheese.
Then the tomatoes and the girl’s shredded chicken!
Then the red onions. Oh and catching the girls sneak the feta!
Finally, the finishing touch…tomato and basil feta, topped with fresh basil. I really just do the basil for the smell of it cooking in the oven! Ready to bake. It only takes about 10 minutes, enough time for the cheese to melt and the tomatoes to get soft.
No cookie jar? Caught with their fingers in the Pesto!
The smell of this pizza cooking is to die for! I wish I could bottle it up! OK, maybe not that extreme…but I make it all the time just so I can fill the kitchen with the smell of it! Done!
It’s nice and crisp and we have enough for leftovers tomorrow! That wouldn’t happen if Jason were here!
**Side note…Ava just walked in and said she has something that she wants to add to her Christmas list! Wait, what? She has a Christmas list already? It’s MARCH! Fantastic!
