I don't really use cookbooks anymore, I find most of my recipes online, but mom got me one of her cookbooks for Christmas and it is worth having to flip through pages to browse recipes.
Her recipes are real, with actual ingredients that you can find at the store...without having to ask a store employee where you might find something.
That being said, I made a recipe this morning that reminded me of something she would make. It wasn't her recipe, but I bet she has one similar up her sleeve! She just seems like wonder woman to me!
Have you ever heard of Scotch Eggs? Well, if you have, good for you...but I never had until I happened upon the recipe. I knew I had to make them since I already had all the ingredients in the house. Well and it was a plus when I explained the recipe to Jason and he begged me to make them ASAP. So I made them this morning. Prepare to be amazed or just wonder why you haven't ever thought of this yourself!
Appearantly, for Scotch Eggs, all you need is boiled eggs, breakfast sausage and bread crumbs or panko. You also need flour and an extra egg...but who doesn't have those already?
| I used bread crumbs because I need my panko for another recipe...but I also "spiced" it up with a blend of seasoning and herbs...basically, have fun with it.
So, with all this, of course you have to take the shell off of your boiled eggs. (Just incase you were wondering). So with the egg, just dip in the flour, then take a palm full of sausage and flatten it in your hand, take the floured egg and cover it with the sausage. Make sure the entire egg is covered in the sausage. Next, roll in the RAW egg, (just to make that clear, we have boiled eggs and a "scrambled egg") then roll in the bread crumbs and place on a foiled baking sheet.
Bake these little or shall I say medium sized balls of yumminess at 375 for about 35 minutes. Just be warned, the smell of these while they are baking makes you want to take them out early...DON'T DO IT!
These Scotch Eggs are quite tasty! I used some hot sauce with mine...I love a kick with my breakfast and just can't seem to eat eggs without it. It was Jason approved when all he could do was groan in approval. Funny way of showing appreciation and deliciousness!
I really didn't change the recipe much other than using breadcrumbs and seasoning them. Enjoy! No really, go make these and enjoy them!
Scotch Eggs

ingredients
1 lb chicken, turkey or pork Italian sausage 4-5 large eggs, hard boiled (not too large) flour (just a little to coat the eggs) 1 large egg 2 cups fine dry breadcrumbs
Directions1. remove meat from casing. one large sausage should cover 1 egg (a little less than 1/4 lb). use your judgement. i made 5 scotch eggs from a 1lb package of Jenny O Turkey Sausage for the first batch.
2. roll the eggs in flour. (this helps the meat stick to the egg) 3. wrap each egg evenly in a portion of meat, being sure they are covered completely. roll it around in your hands a bit to ensure even sausage coating. 4. beat the remaining egg in a small bowl 5. dip each egg/sausage ball in the beaten egg then coat thoroughly in breadcrumbs. 6. optional...chill for one hour...or don't...i didn't. 7. bake until golden brown on a cookie sheet (line with tin foil for easy clean up) at 375°F; about 30 minutes. mine took about 35 minutes. |
